There are a few ways to do it- even flavors!
Ours today was :
2 cups shredded coconut
2 cups puffed rice cereal
*mash with pestle until fine (or in a food processor) then mix in
6 Tbsp honey
3 Tbsp melted coconut oil
3 Tbsp coconut milk (from can)
1 tsp vanilla extract
1 tsp salt
*put in the refrigerator for about 15 minutes, then roll into balls. And roll balls in a pile of shredded coconut for texture.
Makes 24
Must stay refrigerated, could freeze too.
Sometimes we only use coconut, no rice puffs- then no need to mash, just mix all ingredients together.
Sometimes we use maple syrup or coconut nectar or agave nectar instead of honey.
Sometimes we add a flavor-- peppermint or lemon ... instead of vanilla.
